Pichette tell a story of a recent Bartender Integrity Check at a famous nightclub in RI. The owners suspecting that a female bartender may be stealing money. They set up a time to meet with the owners at the club to go over the operation and make a plan. They had two spotters spend 2-hours investigating a bar located on the first level of the club. The first hour was watching the bartender in question, and the second half was investigating the second bartender. During the first hour, they found very little wrong with the bartender in question. However, when they watched the second bartender, Pichette says she should have been the main target. In one hour, Pichette says she gave away approximately 70% of the drinks she made to friends, staff, and the band. She drank multiple shots, and paid little attention to paying customers. They also noted that the remaining staff was out of control and acting as if they owned the business. The next day, they investigated an upstairs bar. Pichette says the evaluation uncovered a loss of approximately $1500.00 in direct alcohol losses over 4 - hours of investigation. They also had multiple problems with staff, door staff, compliance issues and insurance issues that were losing them even more money.
